Thai Padprik Chicken

My other half was commenting that we haven't eaten Thai food for a long time when he saw a bottle of tomyam paste at our local shopping centre. We bought the paste but somehow I ended up cooking Thai Padprik Chicken which we ate with white rice...ha!ha! Sometimes, we will do this into a 1-dish meal by adding yellow noddles into it. According to my Thai friends, this dish is known as Gai Pad Prik Pao. However, the ingredients are different...he laughed.  Oh well...I have to suit my family...ha!ha!  Here's a photo of my very own version of Thai Padprik Chicken which is still in the wok.  This is just yummylicious with plain white rice!!!

I just love Thai food....till next time...chok dee...

Hong Kong Sweet Bread (Pai Bao)

It has been sometime since I last posted. I have been so busy lately with work. Now that school has started, its work and study once again. My 2 kiddos have begun to eat more bread now. So, I decided to make some sweet type of bread. I thought about the Hong Kong sweet buns which we ate before when we were in Hong Kong. Just a phone call to my buddy and voila....pai bao at home.  The only item which I did not add in was the condensed milk as I ran out of it. However, it still taste so good and so fluffy soft!!!  I also made it into round buns for my prince as he loves anything shaped into a burger bun. Here's a photo of it.

Till next time...happy baking!!!

BBQ Chicken Lettuce Wraps

Spring is here but its doesn't feel like Spring. Too much rain and I was thinking of how to finish up my lettuce. So, in the end, I decided to make some lettuce wraps.  This can be an appetizer or a side dish with your main course. Most of the time, I will let the whole family do their own wrapping. There's so many recipes out there for these wraps.  This time around, I just made BBQ Chicken.  All I have to do is to shred the chicken and wrap it with lettuce. For the dipping sauce, you can use BBQ sauce, thai chilli sauce, etc. Here's a photo of my BBQ Chicken Lettuce Wraps.

Happy wrapping!!!

Mini Muffins with Oreo

I love baking mini muffins as its just the right size for my kiddos. I tend to bake muffins once a week but never remember to take a photo of it. Its always bake, cool and serve to the kiddos including my other half. This time, I told myself that I should at least take a photo of it and my other half was kind enough to take it for me. For me, I will just use a basic muffin recipe and add the additional ingredient (oreo, apples & cinnamon, etc) in the end before baking it. So, here's a photo of my Oreo Mini Muffins.

Cheers to Mr. Muffin!!! You really make my kiddos day!!!

Spelt Bread (Dinkelbrot.) & My 1st Sewing Project

I heard about spelt bread from my friends from Germany and they call it Dinkelbrot.  When I went to the store to buy myself a packet of spelt flour, I asked the kind lady there about the spelt flour. She mentioned that this flour produces a softer grain of gluten thus more gentle toward the digestive system.  She also informed me that spelt flour is NOT gluten free. However, its low GI. I used the same old recipe which I often use to make white bread but substitute the flour with spelt flour.  Here's a photo of my spelt bread.

As I mentioned in one of my earlier posts, my other half bought me a sewing machine. My prince has been bugging me to sew him a Ben10 pants and my princess wants her Dora dress. I did not have any commercial patterns at hand. Therefore, the next best thing to do was to trace the pattern from their favourite pants / dress. Here's my finished sewing project.  Here's a photo of my son's Ben10 pants.

Here's a photo of my daughter's Dora dress.

So...this home engineer has another job...sewing...ha!ha!
That's all for this post...till next time.. ta-ta!

Homemade Cherry Jam

My other half bought 1kg of cherries for $10 and as we could not finish it, we decided to make some jam.  The last time I tried making jam, I did not buy any jam setter. Therefore, the jam did not turned out like the jams which we buy from outside. So, this time around, I made sure I bought a packet of jam setter and I must say the result was really good. As my other half loves biting into the fruit itself, he made sure that the cherries are still whole so that he could bite into it...

If you want to make your own jam, it a really easy process...just cut the cherries into 2, take out the seeds and boil it in the pot with some sugar for 30 mins or so.  Then, add the jam setter and let it cool properly before popping it into the fridge. Here's a photo of our homemade Cherry Jam:

Maybe the next time around we will try strawberry jam.....:)

Cokodok or Kueh Kodok (Banana Fritters)

When we have too many ripe bananas, the easiest way to ensure that it will not go to waste is to mash it and deep fry some cokodok.  Some of my friends call it kueh kodok. Its actually banana fritters. Cokodok is a favourite snack in my household. Its really easy to do...just mash the bananas, add in some eggs, sugar and flour. Stir it well and deep fry it.  The outer layer is crispy and the inside is soft and yummy.  It has been known as a comfort food for some...:)  My other half prefers to sprinkle icing sugar on top of the cokodok but I prefer to eat it plain.  Here's a photo of our Cokodok or Kueh Kodok:

Do try this simple snack...its just delicious!!!
You won't regret it....
